Fast and Fit Pita Pockets

Ingredients:

A healthful, tasty way to use leftover turkey
2 cups diced cooked turkey
3/4 cup pitted prunes, quartered
1/2 cup sliced celery
1/4 cup sliced green onions
1/2 cup unflavored nonfat yogurt
1 tablespoon sweet-hot mustard
Salt and pepper, to taste
Lettuce Leaves
3 pita breads (about 6 inches each), halved to make 6 pockets
Directions:

In bowl combine all ingredients except salt, pepper, lettuce and
pita pockets. Toss to mix thoroughly. Season with salt and
pepper. Cover and refrigerate until chilled. Fill pita pockets
with turkey mixture and lettuce leaves.

Makes 3 cups turkey salad (enough for 6 pocket sandwiches)

Note: For a main dish salad, arrange turkey mixture on lettuce;
sprinkle with toasted, slivered almonds and garnish with red
apple slices and grape clusters.
