Pineapple Glazed Fish

Description:
I've only done this using the grill.

Ingredients:
FISH
4 (4 ounce) whitefish, haddock or orange roughy fillets
PINEAPPLE GLAZE
1 (8 ounce) can pineapple slices in its own juice, drained,
reserving juice
1 1/2 teaspoons cornstartch
1/4 teaspoon ginger
2 tablespoons honey
1 tablespoon lemon juice
2 teaspoons lite soy sauce

Directions:
In a small saucepan, conbine pineapple juice, cornstartch,
ginger, honey, lemon juice and soy sauce; blend well. cook and
stir over medium-high heat until mixture boils and thickens.
Place fish on a well oiled rack, brush with glaze. Grill for 7-
10 minutes or until fish flakes easily, brushing with glaze
occasionally.
Brush pineapple slices with glaze; grill 4-6 minutes or until
thoroughly heated, turning once and brushing with glaze.
Heat remaining glaze to a boil; serve with fish.

Serving Suggestions:
To serve top fish with one grilled pineapple slice.
I've used this mixture on my chicken breast. The left over
chicken will make a great additive to a summer salad!
